Instructions

  1. Prepare the Ingredients

    Dice the onion and bell pepper, mince the garlic, and chop the spinach. Set aside.
    Dice the tofu to bits, to make it easier to make more of a crumble on the pan.

  1. Prepare the Sauce

    In a small bowl, mix the vegan mayo, sriracha, dried basil, and garlic powder until smooth. Set aside.

  1. Sauté Onions and Garlic

    Heat 1 tbsp of oil in a large skillet over medium heat.
    Add the diced onion and minced garlic, cooking for 2–3 minutes until fragrant.

  1. Cook the Tofu and Vegetables

    Add the diced tofu to the skillet, give it a little chop in the skillet.
    Add paprika, nutritional yeast, salt, and pepper. Stir well.
    Add the diced bell pepper and cook for 5–7 minutes until the pepper softens and the tofu is lightly browned.

  1. Add the Spinach and Tortilla Strips

    Stir in the spinach and give it a quick mix.
    Stir in the sriracha mayo sauce.
    Fold in the tortilla strips, stirring gently to combine.

  1. Simmer and Cook

    Reduce the heat to low and cover the saucepan with a lid.
    Let the mixture simmer for 5 minutes, stirring occasionally.
    Optional: add in vegan cheese shreds in three minutes.

  1. Serve

    Remove from heat and let sit 5-10 minutes.
    Enjoy as-is or with your favorite sauce. :)
