Ingredients
  • 2 Packages Tofurky Butter Chick'n
  • 3 Buns
  • Vegan Butter (to toast buns)
  • Mint Chutney
  • 3/4 Cup Fresh Mint Leaves
  • 1/4 Cup Cilantro
  • 1/4 Serrano Pepper (Omit if you don't want spice)
  • 1/2 Tsp Ground Cumin
  • 1 Tbsp Lemon Juice
  • 2 Tbsp Water
  • Pinch of Salt
  • Additional Toppings
  • 1/2 Cucumber (To ribbon)
  • Cilantro (Garnish)
  • 3 Lemon Wedges
Instructions
  1. Prep the Mint Chutney & Toppings

    Blend chopped mint, chopped cilantro, chopped serrano pepper (OMIT if you don’t want spice), ground cumin, lemon, water, and salt until smooth. Taste and adjust!
    Cut 3 lemon wedges.
    Ribbon the cucumber.

  2. Cook the Tofurky Chick’n:

    Heat a pan over medium.
    Add Tofurky Butter Chick’n (no extra sauce needed!) and sauté for 3–4 minutes until edges caramelize.

  3. Toast Buns:

    Lightly butter slider buns ands slightly toast.

  4. Assemble:

    Slather mint chutney on both buns.
    Add Butter Chick’n.
    Top cucumber ribbons and cilantro.
    Squeeze lemon wedges!
