Dark Pistachio Coconut Bark

This minimal ingredient Dark Pistachio Coconut Bark is the ultimate vegan no-bake treat! Creamy dark chocolate gets topped with crunchy roasted pistachios, coconut flakes, and flaky sea salt. Made with plant milk for velvety richness, it’s ready in less than 30 minutes (mostly hands-off!)!

Side note - I brought this treat to a tv show watch party once and it was the first thing gone! Great for gatherings, or just a guilt-free dessert to meal-prep for the week!

Ingredients
    Chocolate Base
  • 2 Cup Dark Chocolate Chips (70% dark +)
  • 4 Tbsp Plant-Based Milk (I used Maïzly's Original Corn Milk)
  • 1 Tbsp Maple Syrup
  • Crunch Mix
  • 1/2 Cup Roasted Salted Pistachios (Chopped)
  • 1/4 Cup Coconut Flakes
  • Sea Salt Flakes (Sprinkled)
Instructions
  1. Prep Ingredients

    Measure chocolate chips + plant milk
    Roughly chop pistachios
    Line baking sheet with parchment

  2. Melt Chocolate Chips

    Combine chocolate chips + plant milk + maple syrup in saucepan
    Heat on lowest stove setting
    Stir constantly 4-5 minutes until glossy and smooth

  3. Assemble Bark

    Pour melted chocolate onto parchment
    Spread evenly with spatula
    Immediately sprinkle pistachios and coconut flakes
    Finish with sea salt flakes

  4. Set & Serve

    Freeze 20 minutes
    Break into rustic pieces
    Store in airtight container
