Garlic Herb Asparagus & Mushroom Pastries

Prepare the Veggies
Mince garlic, chop (washed) mushrooms, trim and chop asparagus, chop thyme.

Filling
Heat olive oil in a skillet.
Sauté minced garlic, chopped mushrooms, chopped asparagus bits, thyme, and ground black pepper (to taste) until tender and set aside.
Let cool for 8-10 minutes.
Mix with vegan cream cheese in a bowl.

Assembly
Preheat oven to 400°F (200°C).
Roll out puff pastry and cut into 3x3-inch squares, placing them onto a parchment paper.
Carve a smaller square, within the square, and fill the filling.
Use basting brush to brush on soy milk along the borders (around the filling, directly onto the sheet).

Bake for 15–18 minutes until golden.
Let cool slightly before serving.
