Ingredients
    Nachos
  • 4 Taquitos (I used Starlite Cuisine Barbacoa Mushroom)
  • 6 Ounces Tortilla Chips (1/2 a (12oz bag) bag of tortilla chips)
  • 1 Cup Black Beans (Cooked)
  • 1.5 Cup Shredded Plant-Based Cheese
  • 1/2 Cup Guacomole
  • 1/4 Cup Pico de Gallo
  • 1 Jalapeño (Sliced)
  • 2 Tbsp Chopped Cilantro
  • Chipotle Sauce
  • 1/4 Cup Vegan Mayo
  • 1 Tbsp Adobo Sauce (From canned chipotle peppers)
  • 1 Tsp Lime Juice
  • 1/4 Tsp Smoked Paprika
  • 1/4 Tsp Garlic Powder
Instructions
  1. Prepare the Taquitos

    Bake Or Air Fry Starlite Cuisine Barbacoa Mushroom Taquitos according to package instructions until crispy.
    Once cooked, cut the taquitos into bite-sized pieces.

  2. Assemble the Nachos

    Preheat your oven to 375°F (190°C).
    Spread tortilla chips on a large baking sheet or oven-safe platter.
    Evenly layer black beans, chopped taquitos, shredded vegan cheese, and jalapeños over the chips.

  3. Bake Nachos

    Place the nachos in the oven and bake for 12 minutes, or until the cheese is more melted.

  4. Top it Off

    Remove from the oven and top with guacamole, pico de gallo, and
    chopped cilantro.

  5. Make Chipotle Sauce

    Mix vegan mayo, adobo sauce, lime juice, smoked paprika, and garlic powder until smooth.
    Drizzle the sauce over the loaded nachos for a smoky, creamy finish.
