Sweet Potato & Cinnamon Puffs

Ingredients
  • 1 Sheet Frozen Puff Pastry (Thawed)
  • 1 Medium Sweet Potato (Peeled and cubed)
  • 2 Tbsp Maple Syrup
  • 1 Tsp Ground Cinnamon
  • 1/3 Tsp Ground Nutmeg
  • 1 Tbsp Plant-Based Milk (For brushing)
  • For Sprinkling Mix
  • 1 Tbsp Organic Sugar (For sprinkling)
  • 1/4 Tsp Ground Cinnamon (For sprinkling)
Instructions
  1. Prepare the Sweet Potatoes

    Peel and cube the sweet potato.
    Boil until tender, then mash with maple syrup, cinnamon, and nutmeg until smooth.

  2. Assemble the Pastries

    Preheat your oven to 400°F (200°C).
    Roll out the puff pastry and cut it into 3x3-inch squares.
    Add a spoonful of sweet potato mash to the center of each square, fold into triangle, and seal the edges.

  3. Bake

    Place the pastries on a lined baking sheet.
    Brush the tops with plant-based milk and sprinkle with the cinnamon sugar mixture.
    Bake for 15–18 minutes, or until the puff pastry is golden and flaky.

  4. Cool and Serve

    Let the pastries cool slightly before serving. Enjoy warm :)
