Peel and cube the sweet potato.
Boil until tender, then mash with maple syrup, cinnamon, and nutmeg until smooth.
Preheat your oven to 400°F (200°C).
Roll out the puff pastry and cut it into 3x3-inch squares.
Add a spoonful of sweet potato mash to the center of each square, fold into triangle, and seal the edges.
Place the pastries on a lined baking sheet.
Brush the tops with plant-based milk and sprinkle with the cinnamon sugar mixture.
Bake for 15–18 minutes, or until the puff pastry is golden and flaky.
Let the pastries cool slightly before serving. Enjoy warm :)
