These Thai peanut crispy tofu sandwiches are the ultimate high-protein vegan lunch! Featuring golden, crunchy tofu cutlets, a creamy Thai peanut sauce, fresh cucumber, shredded carrots, and cilantro, every bite is packed with flavor and texture. The homemade peanut sauce is sweet, savory, tangy, and slightly spicy, making it the perfect pairing for crispy breaded tofu.
Made with high-protein extra-firm tofu and protein-rich peanut butter, each sandwich delivers approximately 55g of plant-based protein, making this a satisfying meal that keeps you full. The best part? These vegan tofu sandwiches come together in just 35 minutes and are perfect for an easy lunch or dinner when you're craving something crispy, saucy, and better than takeout. I love prepping all the ingredients and meal-prepping these as well.
