Ingredients
  • 2 Roti (I used the brand Arya)
  • 2 Cup Shredded Hash Browns
  • 1/2 Cup Vegan Cheese Shreds
  • 1/2 Block Extra Firm Tofu (Cut into cubes)
  • Masala Blend
  • 1 Tsp Red Chili Powder
  • 1 Tsp Smoked Paprika
  • 1 Tsp Ground Cumin
  • 1.5 Tsp Garam Masala
  • 1/2 Tsp Ground Turmeric
  • 1.5 Tsp Salt
  • For Brushing
  • Tamarind Sauce
  • Optional For Serving
  • Plant-Based Yogurt

  • Skewer Sticks
Instructions
  1. Prep & Cook Tofu

    Cut tofu into 1 inch cubes.
    Air-fry or Bake 400°F for 15 min.

  2. Prepare Ingredients

    Coat pan with oil drizzle or oil spray. 
    Cook hash browns in a pan over medium heat until lightly crispy. 
    Pour in the masala spice blend until evenly coated. 
    Pour vegan cheese over the hash browns while they are still in the pan and stir until melted and evenly combined. 

  3. Assemble Roti

    Lay one roti flat.
    Spread the cheesy hash browns evenly over it.
    Place the second roti over it and press gently.

  4. Cut & Skewer

    Cut the stacked rotis into long strips lengthwise.
    Take one strip and fold it accordion-style onto a skewer, adding a tofu cube between each fold.
    Repeat with remaining strips.

  5. Brush & Cook

    Brush skewers with tamarind sauce.
    Grill on a pan over medium heat until the rotis are golden.

  6. Serve

    Drizzle with vegan yogurt and/or tamarind.
